After a while do you start feeling most chicken recipes are... generic? I do. In fact, chicken is my least favorite ingredient. I know I know. It absorbs flavor spectacularly, but still, I get tired of it. Even this recipe, that definitely had a flavorful punch, it too was just another chicken, pasta, and sauce recipe.
Roll your chicken in flour, fry the outside crunchy, remove. Saute carrots, green onions, and garlic. Add wine, tomato paste, chicken broth, pepper, and rosemary. Bring to light boil, add chicken again, cover, and let simmer until liquid has been mostly evaporated. Serve over pasta.
As far a chicken recipe goes, this was good (too much unique and strong in flavor for Dave, however). I like a bold taste.
I need a new cookbook... any suggestions?
