
Um, to eat. I think. Neither Dave nor I love tomatoes, and this has a very fresh tomato flavor - with a zing. If I were to make it again, I think I'd add a good portion of sugar. I can see other people loving this soup. You can even leave out the brandy and still get a nice result.
Over simmering oil, cook onion, garlic, and bay leave. Stir in a can of whole tomatoes with the juice. Mash the tomatoes (thank you Molly for my new potato masher!).
Stir in sugar and torn up slices of good white bread. Boil. Let the bread completely saturate and start to break down.


Transfer soup to a blender and add more oil oil and blend until creamy.
Return soup to pot and add chicken broth and brandy. Boil. Serve.
