To eat or not to eat...Cheesy broccoli & Rice casserole





I'm not much of a casserole cook, myself. In our 6 1/2 years of marriage I've probably made less than a handful. So this was unfamiliar territory. I served this as a side to delicious southern pork chops.

Begin by pulsing good white bread with parmesan cheese, melted butter, and minced garlic. Set aside.

Cook your broccoli - use the microwave for faster cooking florets, and a pot with sautéed onions for the tougher, but still flavorful stems.

Add uncooked rice, broth, milk/cream, cayenne pepper, and salt and boil. Cover and let the rice soften. Once the rice is cooked add your pulsed bread crumb/ parmesan mixture, the broccoli, some sharp cheddar, more parmesan, and a bit of cayenne pepper. Bake. That's it.

To eat or not to eat... I guess to eat. I mean, it was nothing exciting, but then, casseroles rarely are, right? Or maybe I am just ignorant of the delights to be found in the world of big-one-dish-dinners.

I make a Broccoli, cheese, rice and chicken casserole that is DIVINE. It's one of our favorite dishes. It's probably boring enough Dave would even like it...
