I don't feel like writing about meatloaf. This is a great recipe taken from my friend Laura, who stole it from our mutual friends Brooke and Jaxon. Something I didn't know about meatloaf, don't cook it in a bread pan, at least not at first. Mold it into the shape of a loaf of bread, but cook it on a cookie sheet. After the first 45 minutes, pour off the grease from the cheese and meat. Then transfer it to a clean bread pan and finish cooking for the next 45 minutes.
The recipe suggested doubling the sauce. I did. I wish I had quadrupled it. Ketchup works too, but meat loaf has to have lots and lots of sauce. Don't you think?
