Chicken and Dumpings

Remember I said save the chicken leftovers and make your own broth? Do the same with the cut up left over chicken. Use it the next day for chicken and dumplings (or replace the dumplings with pie crust for pot pie.) For an easy dinner use pre-made dumplings (like Pillsbury pull-ways) or a pre-made pie crust. For this recipe I like to use the Barefoot Contessa's Chicken Stew, except I use milk instead of cream. It's filled with potatoes, corn, peas, and onions, but you can use whatever veggies you want.


Don't forget: the key to good soups, stews, etc., is good ingredients, but especially flavorful chicken broth. So make your own and only use chicken bouillon cubes as a flavor enhancer.
