Chicken Marsala


Yum! This is a definite make again.
Chicken Marsala

Start by cooking the mushrooms and green onions in a little butter; remove. Then cook the chicken in a little butter as well; remove. Add the mushrooms and onions back to skillet. Simmer them in some of your homemade broth and about 1/2 cup marsala (I used sherry instead because I figured I'd get more use out of it.) I've never cooked with wine before but this month I'm going to try a few recipes. Can you see the immense steam coming from the pan? That's the alcohol burning off.


Spoon veggie/broth/wine mixture over chicken and serve over pasta. Soooo good!
