To Eat or Not to Eat


Fish Tacos with Homemade Mango Salsa



Sound gross? Well, I'd never had fish tacos before so I was a bit hesitant, but would you know it? What a yummy combo! First you layer a hot, oven-heated hard taco with shredded cabbage drenched in fresh lime juice. Then add a few pieces of baked fish, and finally top it with the mango salsa. That's the key! Ooh, the salsa. It's a combo of sliced mango, red pepper, onion, and the real spark is fresh lime zest and juice. Don't like mango? That's OK, substitute fresh peaches. Oh I bet that'd be good.

Abby, that sounds great. I will try it. Did you bake the fish or buy already baked. What kind of fish did you use. I can't wait to try it. Love you, give everyone a big hug for me.
