Apple Carrot Bisque


When I first tasted this soup I groaned with delight. So rich and creamy; I ate the whole thing and then made another batch before Dave got home. Dave, on the other hand, finally confessed that after the first bite he plugged his nose (I was taking care of Paige and had already eaten so I didn't see.) I guess not everyone will enjoy this apple, carrot, chicken broth, and nutmeg soup. I think if you enjoy Butternut Squash soup you'll like this.
Cook your carrots in a butter and chicken broth (notice my "ice cube" chicken stock?) Then add fresh apples or applesauce and puree. Add milk or cream and nutmeg. I don't care what Dave thinks, I loved it!
