


I finally invested in a meat mallet. Up until now I've just used a hammer wrapped in a zip lock bag. What a difference! But wow. I didn't realize how difficult it was to really flatten a chicken breast. And what a mess. I must have gone through an entire tub of disinfectant wipes. Yuck. Anyway, flatten your chicken, then roll up swiss cheese and ham together; (I like getting mine from the deli so I only buy what I'll actually use.)



Then roll the ham/cheese in a flattened chicken breast. Seal up the edges (I had to get creative with toothpicks for this part,) then roll in butter and bread crumbs.
Bake.

Cook up a sauce of cream of chicken soup, lemon juice, and sour cream. Pour over it to serve. (Next time I'll try a different sauce; I didn't care for this one.)

This is Dave's plate. I think he enjoyed it. This is one of his favorite meals I make, but I'm not a general fan of chicken, and so for me to like this I'll have to add lots more cheese and ham.
Regardless, this dish is a lot of work. And it's gooey, raw chicken type work. Blah. I'm sure he'd say it's worth the effort, but then again, that's coming from the one who doesn't have to put in the effort.
