Chicken Pot Pie
I think I blogged about this dish before? It has become one of my very favorite meals. I've stopped making my own pie crust, though. Sorry. It just is so much easier to buy them pre-made. Although pie crust is pretty easy to make, it never looks as attractive as the store bought.
So with this recipe I boil 2 chicken breasts, then add my vegetable scraps to make chicken stock. I freeze the broth in ice cube trays (I've figured out that 5 ice cubes is approximately 1 cup of broth.)Ice cubes just make future cooking so much more convenient.
Then cut up one chicken breast for this meal and refrigerate the other for another meal such as chicken tacos. You've already got a head-start on your other meals for the week.
As I think I mentioned before, I use the Barefoot Contessa, Ina Garten's, Chicken Stew recipe and just thicken it. One breast of chicken is enough to make two pies; enough for dinner and for hubby to take to school for left-over lunch. So yummy!
