To eat! Definitely to eat!

Best Roast Beef!
Or at least it would have been if I hadn't over-cooked the meat. But still, the gravy made it worth it. Oh this was sooooooooo good! Mmmmm! Ok, so I didn't use a recipe, but I combined a few things I've read in various cook books. First I took a beef roast and rubbed Kosher salt all over it. Then I dripped a few drops of Liquid Smoke (if you haven't used it before it's wonderful! You find it by the barbecue sauce), then draped 3 slices of raw bacon over the top. I made sure the layer of roast fat was on the top so the flavor from it would soak down into the meat. Then I wrapped up the meat in tin foil and cooked it 500 degrees for 30 minutes and then another 1 1/2 on 250 degrees. Oh my gosh! It made the most delicious gravy I have ever tasted! yum yum yum!What did I do with the gravy? Well, I made mashed potatoes of course, but also...

I've heard of this dish but never tasted it. Basically you pour a few tablespoons of your meat drippings into
a pie pan and then pour over it a batter (after cooking it kind of has the taste and consistency of a thick crepe except it also puffs up with air.) Then you drizzle gravy over it. A lot of people in England save this for last so it has time for the gravy to soak in. I have to say, it looks better than it is. Like most english food, it is a little bland, but it is fun to serve.

I prefer to use fresh green beans, but this time I tried frozen. I'm afraid each bite was a squeaky burst of water. Yuck. Anyway, you cook the beans and then mix them with toasted (in butter) almonds and lemon juice.

Holy smokes that looks delicious! Abby, I miss you (and your cooking!) more than you know. I miss my favorite neighbor in the whole world. I miss Paige and I'm missing her growing up! I miss the fish, the movie nights, the chatting nights, I miss it all!
